Roast Chicken with apples is rich will soul-warming flavors and easy to make! It's a favorite dish for fast weeknight dinners, Sunday supper or a dinner party. Flavors of fall make it a cozy dish anytime. Only 25 minutes cooking time!

Three types of apple flavor combine in this sweet and savory recipe. Lean boneless chicken breasts cook in a rich savory sauce with fresh apple slices and onion for the perfect chicken dinner that's out of the ordinary. Fresh herbs, Mediterranean spices give this baked apple chicken an exciting flavor.
The chicken cooks at high heat which caramelizes the natural sugars in the apples and onions.

What makes this skinny?
Using boneless skinless chicken breasts which are a lean protein. Because it's skinless there isn't excess chicken fat in this chicken recipe. As much as we love crispy skin it's a big source of calories and fat. We use the recommended portion size of 4-ounces per person.
Combining lower calorie with some higher calorie ingredients creates a delicious dish with rich flavor without loading on tons of extra calories.
Recipe Ingredient Notes
Boneless skinless chicken breasts. You'll use 2 pounds. Select chicken breasts that are similar size so they cook in the same amount of time.
Unsalted butter. Four tablespoons of melted butter gives this chicken breast recipe delicious rich flavor. Melt butter before starting the recipe.
Apple butter. If you haven't had apple butter it's a thick spread full of apple flavor and warm fall spices. It has a stronger apple flavor than regular applesauce and is thicker.
Onion. The red onion adds both flavor to the dish but is great for serving with the chicken.
Apples. Sliced apples add flavor and a sweet compliment to the savory flavors in the dish. They are served with the roasted chicken too. We recommend using Honeycrisp, Golden Delicious, Fuji, Granny Smith apples. Because of the tartness of Granny Smith apples use only one and use a sweeter apple for the second apple.
Garlic. Two garlic cloves are minced or pressed to add to the recipe.
White wine. Adding a small amount of white wine develops wonderful flavor to in the cooking liquids. If preferred additional chicken stock can be substituted (⅓ cup).
Apple cider. This adds even more apple flavor to the chicken. It adds warm spices too.
Low sodium chicken broth. This rounds out the cooking liquids. We prefer low sodium chicken stock or chicken broth and to add salt 'to taste' after cooking.
Rosemary. Fresh rosemary gives herb flavor to the dish.
Italian seasoning. This favorite blend combines all the classic spices found in Italian and Mediterranean cooking. Use a store bought mix or our homemade Italian Seasoning substitute.
Kosher Salt and freshly ground Black Pepper. Season after cooking.
Best White Wine to use
Pinot Grigio, Sauvignon Blanc, Chardonnay or Chablis are all great choices.
How to make Roast Chicken with Apples

STEP 1. Preparation
Preheat the oven to 400 degrees F.
STEP 2. Assemble the recipe
Place the butter and apple butter into a 9-inch by 12-inch baking pan (or similar size). Add the chicken breasts, red onion slices, apple slices and crushed garlic (photo 1).
Separately combine the white wine, chicken stock and apple cider. Pour over the chicken breasts in the roasting pan.
Season lightly with salt, black pepper, Italian seasoning and rosemary sprigs. Toss to combine (photo 2).
STEP 3. Roast
Place the pan into the preheated oven. Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165 degrees as measured with a meat thermometer.
STEP 4. Broil
Turn the broiler on in the oven. Broil for 3 minutes monitoring it closely or until the chicken is golden brown (photo below).
STEP 5. Rest
After removing the baked chicken from the oven allow it to 'rest' or sit for a few minutes before cutting and serving. This allows the juices to redistribute through the chicken to end up with juicier chicken (the same goes for cooked or grilled meats).
Serve 4-ounce portions with the onion and apple mixture.
Variations
Add some spice! To bring some spiciness to the dish sprinkle in some crushed red pepper flakes.
Use shallots. Shallots have a blend of onion and garlic flavor and are not as strong in flavor as onions. You can swap in the same amount instead of the onions.
How to Store
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat before serving.

- Turn the broiler on in the oven. Broil for 3 minutes watching it closely or until the chicken is golden brown. NOTE: monitor closely to avoid burning.
- Remove from oven and let rest three minutes for the juices in the chicken to redistribute before cutting and serving.
