These low-calorie air fryer pizza roll-ups are a perfect way to enjoy all the satisfying flavors of traditional pizza rolls but with fewer calories and less guilt. They are perfect for an afternoon snack, appetizers at parties, game day gatherings or even as a fun addition to a balanced meal.

What makes this skinny?
Corn tortillas. These are about ⅔ less calories than the same size flour tortillas. They are also naturally gluten-free if you are a gluten-free eater.
String cheese. Using lean mozzarella string cheese versus the usual higher fat cheese for pizza delivers the cheesy flavor without the calories. It's easier than shredded mozzarella cheese too.
Turkey pepperoni. Sliced turkey pepperoni has 70% less fat than regular pepperoni. On average turkey pepperoni is 70 calories per serving and regular pepperoni is 140 calories per serving.
Using the air fryer. This melts the cheese and gives a crisp outside without using a deep fryer.
Recipe Ingredient Notes
Medium corn tortillas. Choose corn tortillas that are around 5-inches in diameter and 50 calories. You'll need 8.
String Cheese. You'll need 4 string cheeses cut in half. We recommend starting with room temperature string cheese for a cheesier end result. Light string cheese is about 50 calories per cheese stick and regular is 80 calories per cheese. Either can be used; the regular cheese will be 'cheesier'.
Turkey Pepperoni slices. You'll need 32 slices which is less than 1 package.
Nonstick cooking spray or olive oil spray
Marinara sauce for dipping
How to make Air Fryer Pizza Roll Ups

STEP 1. Preheat
Preheat the air fryer to 375 degrees f.
STEP 2. Warm the tortillas
Place the tortillas between two damp paper towels and heat them in the microwave for 2 minutes (photo 1).
STEP 3. Assemble
Place four pieces of pepperoni in a row down the center of the tortilla (photo 2). Cut the cheese sticks in half lengthwise. Top tortilla with one half piece of string cheese (photo 3).
Fold once side of the tortilla over the cheese, then roll up the tortilla (photo 4). Repeat for all the tortillas.
STEP 4. Air Fry
Place each tortilla in the basket or tray of your air fryer in a single layer, seam side down leaving some room in between (photo 5). Work in batches, if needed, to keep from overcrowding the tray.
Spray with nonstick cooking spray or olive oil spray. Cook for 4 to 6 minutes cook time, until golden brown (photo 6).
STEP 5. Serve!
Serve hot with marinara sauce for dipping or your favorite dipping sauce! We love these with our Low Calorie Ranch Dressing too.
Variations
Like it spicy? Sprinkle some red pepper flakes inside before rolling up the pizza roll ups.
Italian seasoning. Sprinkle some Italian seasoning inside before rolling or add to the tomato sauce for dipping. OR mix some with non-fat Greek yogurt for a tangy and creamy light dip.
Add vegetables. You can also add thinly sliced cooked vegetables (the pizza roll ups won't cook long enough to cook vegetables). Think green pepper, onion or other favorite pizza toppings you'd add on top of the pizza sauce.
NOTE: for best results do not choose high moisture ingredients like tomatoes which will cause the corn tortillas to crack. If the vegetables are not very thinly sliced the roll ups won't roll tightly.
Expert Tips
Don't skip warming the tortillas. If the corn tortillas are not warmed with damp heat they will crack when rolling them. Don't skip this important step!
Air fryer cooking. Every model and brand of air fryer cooks slightly differently. It's important to monitor during cooking in your air fryer and adjust the cooking time as needed.
Frequently Asked Questions
Because this recipe uses lower calorie corn tortilla (versus flour tortilla) moisture can cause the tortillas to crack. So we've achieved the pizza flavor using the sauce as a dip instead!
How to Store
These pizza roll ups are best enjoyed right after making. They can be stored in an airtight container in the refrigerator for up to 2 days and re-crisped in the air fryer before eating.
