This easy Shrimp Fajitas recipe is packed with juicy shrimp, colorful vegetables and a delicious homemade fajita seasoning. Ready in 20 minutes total time!
No need to go to a Mexican restaurant when you can make these spicy shrimp fajitas at home. It's one of those easy dinner recipes that's a favorite. Serve in a soft warm tortilla, in lettuce leaves or over rice (regular or cauliflower rice). The fajita veggies are great on a salad too.

What makes this skinny?

Recipe Ingredients Notes
Shrimp. One pound of large-size raw shrimp, peeled and deveined with tails removed. Fresh shrimp or frozen fully thawed shrimp can be used. Pat shrimp with paper towels to remove excess moisture before cooking.
Bell peppers. One red bell pepper and one yellow bell pepper are used.
Onion. One thinly sliced medium size onion is used. We love red onion for the color combination but yellow onion can also be used.
Seasonings. Instead of using a pre-packaged fajita seasoning we combine key spices for a perfect homemade fajitas seasoning blend. The spices used are: chili powder, cumin, garlic powder, onion powder, oregano, kosher salt and black pepper.
How to make Shrimp Fajitas
STEP 1. Mix spices
In a small bowl mix red chili powder, cumin powder, garlic powder, onion powder, oregano, salt, and black pepper (photo 1). Set aside.
STEP 2. Cook vegetables
Heat olive oil in a large skillet over medium-high heat.
Add the red and yellow bell peppers and onions and sauté for a few minutes until the vegetables are a little tender and fragrant but not fully cooked (they should have a slight crunch)(photo 2).
Transfer to a plate (photo 3).
STEP 3. Cook shrimp
In the same skillet, add the shrimp (photo 4) and sprinkle the seasoning blend over the shrimp. Cook for 2-3 minutes on each side until the shrimp are opaque white/pink and cooked through (do not overcook otherwise they will be chewy and rubbery).
Add the vegetables back into the pan (photo 5), toss together and squeeze 1 teaspoon of lime juice on top. Sprinkle with fresh chopped cilantro (photo 6) and serve in corn tortillas, lettuce leaves or over rice (photo 7).
Serve immediately with lime wedges.
Oven method
These can be made as sheet pan shrimp fajitas in the oven too!
- Toss all the ingredients together in a large bowl (shrimp, bell peppers, onions, seasoning, and oil) and spread in a single layer on a sheet pan.
- Cook it at 400 degrees for 10-12 minutes or until cooked through; top it with chopped cilantro and fresh lime juice and serve.
Topping ideas
The fajitas mixture is great on its own but you can add favorite toppings too! Here are some skinny suggestions:
- chopped tomatoes
- shredded iceberg lettuce
- a dollop of low fat sour cream or plain Greek non-fat yogurt (we like Chobani brand)
- slices of avocado or guacamole
- pico de gallo or salsa
Storing leftovers
The skillet shrimp fajitas are best eaten when made but leftovers can be stored in an airtight container for 3-4 days in the refrigerator. To reheat, warm the mixture in the microwave in 30-sec intervals; do not to overcook.
Freezing is not recommended.

Instructions
- In a small bowl mix red chili powder, cumin powder, garlic powder, onion powder, oregano, salt, and black pepper.
- Heat oil in a large non-stick skillet over medium-high heat. Add the peppers and onions and sauté for a few minutes until the vegetables are a little tender and fragrant but not fully cooked (they should have a slight crunch). Transfer to a plate.
