Whether for Easter morning or just fun homemade pancakes, these Bunny Pancakes are delicious! The large 6 ½-inch fluffy pancakes are decorated with fresh fruit to create adorable pancakes perfect for a special occasion.
These cute bunny pancakes are easy to make and a perfect Easter breakfast. The finished pancakes are golden brown and ideal for a holiday morning. Pass on the high calorie syrup and enjoy the natural sweetness of these bunny faces!
The base pancake batter can be used for making regular pancakes too, it's not just for rabbit pancakes. It's a favorite pancake recipe anytime.

What makes this skinny?
- Instead of a heaping stack of pancakes each serving is one large pancake decorated with fruit! No syrup is used (but you can add some low calorie syrup if you prefer).
- Sometimes 'less is more'. One special pancake with the fresh fruit especially is filling, satisfying and a fun way to enjoy breakfast.
Recipe Ingredient Notes
All purpose flour. Regular all purpose flour or gluten-free measure-for-measure flour blend can be used. For gluten-free cooking we use and recommend Bob's Red Mill gluten-free 1-to-1 flour blend.
Spoon the flour into the measuring cups to ensure not overfilling which will make the pancakes denser.
Milk. We suggest non-fat milk for a low calorie choice however any type of milk (dairy or plant) can be used.
Unsalted butter. You'll use 2 tablespoons of melted unsalted butter. Be sure to melt it before starting the recipe.
Baking powder. This will be the rising agent to make the pancakes fluffy and soft.
White sugar. Two tablespoons of white sugar is used to make the pancakes lightly sweet. We think between the sweetness of the added sugar to the pancake and fruit they don't need syrup (calorie savings!!).
Egg. One large egg is used to help combine the batter.
Vanilla extract. Gives the pancakes a homey flavor.
Toppings (per bunny head)
- Half a small banana
- 4 blueberries
- 1 large strawberry
- 1 teaspoon chocolate hazelnut spread (Nutella or other brand)

STEP 1. Make the batter
In a large bowl combine the dry ingredients: flour, baking powder, and sugar (photos 1-2). Stir in the wet ingredients: milk, melted butter, egg, and vanilla extract (photos 3-4).
STEP 2. Cook
Heat a large nonstick skillet or griddle over medium heat on the stovetop. Spray a thin layer of non-stick cooking spray on the skillet.
Pour ¼ cup of batter into the pan (photo 5). As pancake cooks, wait until the top side starts to bubble, then flip it over.
Let the pancake continue cooking for about 1 minute or until golden on the bottom (photo 6). Once cooked, transfer to a plate and repeat for the remaining batter.
Note: finished pancakes can be kept in a warm oven on low heat until decorating and serving.
STEP 3. Decorate
Place a large pancake in the middle of a large dinner plate.
Cut a ¼-inch thick slice off the bottom of the banana half (the flat end)(photo 7). Cut the remainder of the banana vertically to create two long pieces for bunny ears (photo 8).
Place ears (long banana slices) at the top of the pancake for bunny ears (refer to photo 11). Place the slice on the pancake for a nose (photo 12).
Remove any stems and greenery from the top of the strawberry (photo 9). Cut it in half lengthwise (photo 10). Place the strawberry halves directly beneath the pancake to resemble a bowtie (photo 12).
Add the blueberries to the bunny face for 2 blueberry eyes, a nose tip and to the middle of the bowtie (photo 13). Fill a plastic baggie with hazelnut spread and cut a small hole at the tip (photo 14). Pipe a small mouth onto the banana slice (photo 15).
Expert Pancake Tips
- Be sure to spoon the flour into the measuring cups rather than scooping.
- These pancakes are large and soft. Only cook one pancake at a time in a large nonstick skillet.
- Wait until you see a number of bubbles on the surface before gently flipping the pancake over.
- As the batter sits is will become slightly thicker and the pan will become hotter. If toward the end the pancakes don't spread in the pan as well, take a pliable spatula and tease it through the batter in the pan after pouring to make the larger size pancakes.
- Pancakes will cook faster after the first one.
Shortcut option
If you have a favorite pancake boxed mix (regular or gluten-free) you can substitute for the pancake portion and just decorate the bunny face.
Storing leftovers
Store leftover pancakes (undecorated) in an airtight container or plastic bag in the refrigerator for up to 2-3 days. Reheat in a toaster or toaster oven before decorating and serving.
Frequently Asked Questions
As the pancake cooks on its first side small bubbles will begin to appear on the top side. This is the right time to flip the pancake over.

- Spoon ¼ cup of batter into the heated pan. When small bubbles appear on the surface of the pancake, flip it over. Cook 1 additional minute or until the pancake is golden brown and cooked through. Transfer to a plate.
- Cut a banana in half in the middle. Peel the banana and cut a ¼-inch thick slice from the flat end of one of the banana halves.3 small bananas
- Cut the remainder of the banana half in half vertically (these will be the bunny ears).
- Place one pancake on a dining plate. Place the banana slice on the lower portion of the pancake for a nose. Place the two long banana halves above the pancake for ears.
- Place the strawberry halves directly beneath the pancake to resemble a bowtie.6 large strawberries
- Place two blueberries for eyes, one for the tip of a nose on the banana slice and one in the middle of the two strawberry halves for the center of the bowtie.24 blueberries

- Repeat for the remaining pancakes and serve warm!
