What are overnight oats?
They are a form of oatmeal that does not require cooking. Instead rolled oats (or old fashioned oats) are combined with milk or other liquid and allow to sit in the refrigerator overnight.
They absorb the liquid and turn out soft and similar to cooked oats.
Eat them cold from the fridge (perfect in the summer months) or warm in the microwave. They are portable too! A perfect breakfast meal prep option.
Easy Apple Pie Overnight Oats
This is a favorite breakfast recipe and one of the easiest breakfasts to make. It's a wonderful recipe for before school breakfasts too.
All the familiar flavors of apple pie are woven into this wholesome recipe. Applesauce and fresh apples add natural sweetness as a bit of pure maple syrup does.
What makes it skinny?
- unsweetened almond milk is used instead of higher fat milk
- no apple pie filling used! Unsweetened applesauce and cut fresh apple topping instead for the apple flavor
- only a teaspoon of maple syrup is used for a touch of sweetness
Recipe Ingredients + Notes
Rolled Oats. Also called 'old fashioned oats' these are whole oats. Do not use quick oats or instant oats for this recipe. Regular or gluten-free oats can be used.
Vanilla Unsweetened Almond Milk. This adds a nice vanilla flavor and not a load of calories.
Unsweetened Apple Sauce. Adds more apple flavor, some natural sweetness and moisture to soften the oats.
Cinnamon. A classic spice in apple pie.
Vanilla Extract. Adds vanilla flavor familiar in baked apple pie.
Maple Syrup. Use pure maple syrup (not pancake syrup). It's a natural sweetener and just a teaspoon lightly sweetens the oats. More can be drizzled on when serving if desired. No extra sugars are required.
Variations
Adjust calories for the recipe as needed with substitutions. Refer to the Toppings chart below for values on classic additions.
Change up the spices. Additional spices like ginger, nutmeg, allspice can be used. Apple Pie Spice can also be substituted.
Use a different milk. Any milk can be used: oat milk, dairy milk, coconut milk, cashew milk all can be used. Any non-dairy milk or dairy milk work!
Add some nut butter. Mixing in some almond butter or peanut butter though these are higher calories ingredients.
Add extra protein. Sprinkle chia seeds, hemp hulls, or chopped favorite nuts on top when serving.
Greek yogurt. Some plain non-fat Greek yogurt adds a tang!
How to make Apple Pie Overnight Oats
Use a jar that is 12 ounces or larger for this overnight oatmeal (jars used here are Weck tulip jars but any jars will work).
Combine the oats, almond milk, applesauce, maple syrup, vanilla extract and cinnamon in a glass jar with a lid (photos 1-2).
Stir to fully combine (photo 3).
Seal and place in the refrigerator (photo 4). Let the oats soak for at least 5 hours, preferably overnight.
How to serve them
When ready to eat the overnight oats add chopped apples on the top. Other toppings may be added!

Ingredients
Overnight Oats
- ½ cup rolled oats regular or gluten-free; do not use Instant Oats
- ½ cup unsweetened Vanilla Almond Milk
- ¼ cup unsweetened Applesauce
- ¼ teaspoon ground cinnamon
- 1 teaspoon maple syrup
- ¼ teaspoon vanilla extract
- ½ apple chopped (for topping when served)
Optional Toppings
- chopped nuts
- extra drizzle of maple syrup, honey or sprinkle of brown sugar
Instructions
- In a 1 ½ cup (12 ounces) jar or larger glass jar, combine the rolled oats, almond milk and applesauce. Stir to fully combine.
- Add the cinnamon, maple syrup and vanilla extract. Stir in.
- Seal and place in the refrigerator for at least 5 hours.
- Top with chopped fresh apple and other favorite toppings if desired.
