In a large mixing bowl, whisk together the low-sodium soy sauce, olive oil, lemon juice, paprika, garlic powder, cumin, and dried oregano.

Add the chicken cubes to the bowl and toss until they are evenly coated with the marinade. Let marinate for at least 15 minutes (or longer for more flavor).

Thread the marinated chicken cubes, bell peppers, zucchini slices, and red onion chunks onto skewers, alternating the ingredients. Lightly salt and pepper.

While assembling the skewers preheat your air fryer to 400°F (200°C).
Place some of the skewers in the preheated air fryer basket, leaving some space between them for even cooking. NOTE: you'll need to cook in batches.
Cook the chicken kebabs in the air fryer for 10-12 minutes, flipping them halfway through, or until the chicken is cooked through and the vegetables are tender. NOTE: start with 10 minutes and extend the time if needed for your air fryer. The chicken should reach 165 degrees F to be considered done. Once cooked, remove the skewers from the air fryer and let them cool for a few minutes before serving.
