Air Fryer Butternut Squash

Roasted Air Fryer Butternut Squash is a delicious, easy side dish during winter squash season. Savory spices complement the sweet flavor of the squash. It's a perfect Thanksgiving side dish.

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 4 cups peeled, cubed butternut squash
  • olive oil spray

Instructions

  • Preheat the air fryer to 370 degrees F.
  • Combine the seasonings in a small bowl and mix.

  • Place the butternut squash cubes in a large mixing bowl. Spritz with the oil spray, toss and spritz again to lightly coat the squash. Sprinkle the seasoning blend onto the squash and toss until the seasonings have coated the squash.
    4 cups peeled, cubed butternut squash, olive oil spray
  • Place the cubed butternut squash in a single layer into the preheated air fryer basket (or tray depending on your air fryer). Depending on your air fryer basket size you may need to cook in batches.
  • Air fry the squash for 18-20 minutes. Halfway through cooking toss or flip the squash over, spritz again with oil spray and complete cooking.
    The squash should be fork tender with some golden brown edges when it's done.

  • The squash is best served hot. Garnish with chopped fresh herbs like thyme or Italian parsley and serve!

Notes

Recipe yield and serving size. As the squash cooks the volume will decrease. The starting amount is 4 cups and the final cooked amount is closer to 2 ½ cups. Servings sizes will be slightly over ½ cup per serving.

This recipe was developed and tested both in a Breville SmartOven Air Fryer Pro (mesh basket - photo 5 above) and a Cosori 5.8 quart XL air fryer (1700 watt)(photo 6 above).
Storing leftovers
​Allow any leftover squash to cool. Place in an airtight container in the refrigerator for 2-3 days. Reheat in the air fryer before serving.
