Oatmeal Apple Cookies (healthy version)

These soft, lightly sweet oatmeal Apple Cookies are full of wholesome oats, applesauce and fresh grated apple. They are delicious and slimmed down on calories for a guilt-free indulgence.

Ingredients

  • 1 cup all purpose flour regular or gluten-free measure-for-measure flour blend
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup unsweetened applesauce
  • 1 ½ cups quick-cooking rolled oats regular or gluten-free
  • 2 cups shredded apple peel before shredding

Instructions

  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  • In a large bowl whisk together the flour, baking soda, cinnamon, and nutmeg.

  • In a separate bowl with an hand electric mixer or in the bowl of a stand mixer fitted with a paddle attachment, beat together the butter and sugar until light and fluffy.
    Add the egg, vanilla extract and applesauce; beat to combine.

  • Add the flour mixture and beat to combine. Do not overmix!
  • Stir in the quick oats and grated apple.

  • Use a 1 tablespoon cookie scoop to scoop the dough and add cookie dough balls to the prepared cookie sheet leaving 2 inches in between.
    Bake for 10 minutes or until the edges turn golden brown.
  • Remove the baked cookies from the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes. Then transfer to a wire rack to fully cool.

Notes

Optional Glaze
The healthy cookies are lightly sweet with a natural sweetness. If you want to bump up the sweetness you can add a glaze. 
  • ½ cup powdered sugar
  • ¼ teaspoon cinnamon (this can also be omitted)
  • 1 ½ tablespoons milk or apple juice (if you want more apple flavor).

How to
  1. When the cookies are cool, prepare the glaze by whisking together powdered sugar, cinnamon and milk OR apple juice until smooth.
  2. Drizzle the glaze over the top of the cookies and allow it to harden before serving.
How to store
Due to the high amount of fresh apples in the cookies store in an airtight container in the refrigerator (instead of room temperature) for up to 5 days. Line the container with paper towels to absorb any excess moisture.  NOTE: storing in the refrigerator will soften the cookies.
How to freeze
Allow the cookies to fully cool before placing in an airtight freezer safe container for up to 3 months. Thaw in the refrigerator before consuming.
