Grinch Snacks (low calorie Christmas treats)

Festive food can still be low calorie as proven by these adorable easy Grinch snacks. This Christmas treat is one you can feel good about and they are always a festive surprise!

Ingredients

  • 30 green grapes rinsed and patted dry
  • 30 strawberries rinsed and patted dry
  • 30 toothpicks
  • 2 small-medium bananas cut into ¼-1/2 inch thick slices
  • 30 mini marshmallows

Instructions

  • Cut across the very top of the stem end of each grape to create a flat surface.
    Also cut across the stem end of each strawberry to remove the greenery and create a flat surface).
    30 green grapes, 30 strawberries
  • Insert a toothpick into the top of a grape (the sliced end). Slide a banana slice on top of the grape.
    Slide a strawberry onto the toothpick next, flat/sliced side down (facing the banana slice). Last put the mini marshmallow on the end of the toothpick.
    30 toothpicks, 2 small-medium bananas , 30 mini marshmallows

Notes

Recipe yield: we chose 30 which is a great for most parties. But you can make as many or as few of these Grinch snacks as you want to by scaling the ingredients up or down.
Variation: Instead of a toothpick you can thread the ingredients onto the end of a bamboo skewer for a fruit kabob!
Making them Ahead
The tricky part of making these Grinch treats ahead of time is not having the banana slices brown. If you are unable to make them just before serving, toss the banana slices in lemon juice to slow the oxidation process that turns the banana brown once they are cut.
Storing Leftovers
If you have leftover Grinch snacks you can store them in an airtight container in the refrigerator for up to 2 days. Once cut both the banana slices and strawberries don't store well.
