Instant Pot Boneless Turkey Breast Roast

This juicy, flavor-packed boneless turkey breast roast is fast and easy in the Instant Pot! It's a white meat only roast with no skin so skinny on calories and big on flavor. You'll never have dry turkey breast again.

Ingredients

  • 1 4.75-pound frozen Boneless Turkey Breast Roast fully thawed
  • 1 teaspoon freshly cracked black pepper
  • ½ teaspoon dried crushed rosemary
  • 1 ½ tablespoons olive oil
  • 1 lemon zested and juiced
  • 1 cup cold water
  • 6 cloves garlic minced

For the gravy:

  • ½ cup chicken broth (may use less)
  • 2 tablespoons cornstarch

Instructions

Cooking the turkey

  • Turn on the SAUTE function and add olive oil.
  • As the oil is heating, rub the black pepper and crushed rosemary into the turkey breast roast.
  • When the oil is hot add the turkey breast into the Instant Pot and sear on each side. Carefully remove the turkey breast (use tongs if possible) and place it on the trivet.
  • Add the cold water to the Instant Pot and scrape off any sticking browned bits from the bottom using a wooden spoon or spatula. Turn off the SAUTE function.
    Add the lemon juice to the Instant Pot.
  • Lower the turkey breast into the electric pressure cooker with the trivet.
  • Top the turkey breast with the lemon zest and garlic.
  • Place the lid on the pressure cooker and set the value to SEALING. Set the pressure cooker to “manual” or “pressure cook” on HIGH PRESSURE for 29 minutes*.
  • When the cooking has completed, allow the Instant Pot to NATURAL RELEASE for 15 minutes followed by a manual release of any remaining pressure.
  • Check the internal temperature of the turkey breast using an instant read thermometer to verify it has reached 165 degrees F. IF the turkey breast has not 165, place it back in the Instant Pot for 5-10 minutes until 165 degrees is reached.
  • Carefully lift the turkey breast from the pressure cooker using the trivet. Allow the turkey to rest for 10 minutes before slicing.

Making the gravy

  • Remove the cooking liquid from the Instant Pot and strain out any pieces of turkey. Measure the volume of the cooking liquids and add chicken stock to make 2 cups of liquid.
  • Remove ¼ cup of the liquid and stir the 2 tablespoons of cornstarch into the liquid to dissolve.
    Add the cornstarch mixture and the other cooking liquid back to the Instant Pot. Turn on the SAUTE function.
  • Stir the pan gravy until it thickens. NOTE: it will continue to thicken as it cools. Once the desired consistency is achieved turn off the Instant Pot.

Notes

Cooking Time: includes the sautéing, pressure cooking and gravy cooking.
If substituting a Whole Turkey Breast (with ribs and skin) or a 3 pound Boneless Turkey Breast:
  • Be sure to sear the skin side well which will brown the skin and render some of the fat.
  • After cooking before making the gravy, strain for turkey bits and put the liquid through a fat separator. This will help remove fat released from cooking the skin.
  • To crisp the skin after cooking, place the turkey breast on a baking sheet until the broiler until the skin has crisped to your liking.
Cooking Times
  • The guideline is 6 minutes per pound of the turkey breast. We use a 15 minute Natural Release.
  • Cooking times can vary based on the shape of the turkey.
  • Always verify the temperature to be 165 degrees F after the release or add more time.
