Firecracker Meringue Cookies







Beat egg whites until frothy (2-3 minutes).

Step 1

Sprinkle in Cream of Tartar. Beat to mix in.

Step 2

Slowly pour in sugar while the mixer is running.

Step 3

Beat until glossy stiff peaks form.

Step 4

Fit a pastry bag with a large star tip. Paint two lines of each red and blue gel coloring with space in between.

Step 5

Fill with meringue mixture.

Step 6

Pipe 1 inch meringue cookies onto a lined cookie sheet. Place into the heated oven for 2 hours until set.

Step 6

Melt candy melts in a bowl. Dip bottom of a meringue cookie into the candy.

Step 7

Then dip into Pop Rocks. Set on clean parchment to set. Repeat.
