Low Sugar Strawberry Jam

This easy low sugar jam recipe is full of natural strawberry flavor. If using sweet ripe berries no sugar needs to be added! No pectin or canning is required. An easy small batch recipe

Ingredients

  • 2 cups sliced fresh strawberries stems removed (sliced or rough chopped)
  • 2 tablespoons chia seeds
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon agave nectar (optional) maple syrup, honey or stevia can also be used

Instructions

  • Place the strawberries in a large pot over medium heat with 2 tablespoons of water. Cook for 5-7 minutes while mashing the fruit with a potato masher or the back of a wooden spoon to break down the berries.
  • Stir in the lime juice and taste the mixture. If sweetening is needed, stir in 1 tablespoon of agave nectar, honey, maple syrup or preferred sugar substitute.
  • Stir in the chia seeds. Cook 30 seconds then turn off the heat and let cool for 10 minutes.
  • Transfer the jam to clean glass jars and refrigerate for up to 10 days. Jam will thicken fully after being completely chilled.

The calories notes above include 1 tablespoon of agave nectar. If none is added 1 2-tablespoon serving of the jam will have 24 calories.
Sweetener options: maple syrup, honey or a sugar substitute can be used instead of agave nectar if desired.
How to Store
Refrigerator: store up to 1 week.
Freezer: Allow to fully cool. Store in an airtight freezer-safe container for up to 3 months. Thaw in the refrigerator and use within 1 week.
