Arabic Salad

Zesty and bright, this Arabic salad is a chopped salad made with fresh vegetables and classic herbs and spices. Tossed in a light olive oil and lemon vinaigrette, it’s the perfect salad to serve with a heavy dinner or as a refreshing main dish.

Ingredients

Dressing

  • 2 tablespoons minced fresh mint leaves
  • 2 tablespoons minced fresh parsley
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 2 teaspoons sumac (spice)
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Salad

  • 1 10-ounce container grape tomatoes rinsed and halved (if they are large quarter them)
  • 1 small small English or Persian cucumber chopped (yield: 2 cups chopped)
  • 1 medium red bell pepper seeds and stem removed, chopped (1 ½ cups)
  • 1 large head green leaf lettuce rinsed and chopped (6 ½ cups chopped)

Instructions

  • Mix the mint, parsley, lemon juice, olive oil, sumac, salt and pepper together in a small mixing bowl.
  • Toss in the tomatoes, cucumber and bell pepper then toss in the lettuce.
  • Serve with additional lemon wedges and freshly minced parsley for garnish if desired.

Notes

Recipe Yield
The full recipe yield is 11 cups of salad. We designated a serving to be a little over 2 cups of salad. For a side salad you may wish to have smaller portions.
Variations
Consider adding some reduced fat crumbled feta cheese, chopped red onion or sliced green onions.
How to Store leftovers
The Arabic salad is best served when made. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days.
MAKE AHEAD: If you won't serve the salad immediately store the dressing and chopped vegetables separately in airtight containers in the refrigerator for up to 1 day before combining. Toss with dressing a few minutes before serving.
