Bunny Pancakes

Light, fluffy BIG homemade pancakes make adorable Bunny Pancakes with fresh fruit decoration. Perfect for Easter breakfast or a fun surprise any time.

Ingredients

Pancakes

  • 1 ¼ cup all-purpose flour regular or gluten-free measure-for-measure flour blend
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 cup non-fat milk
  • 2 tablespoon unsalted butter melted
  • 1 large egg
  • ½ teaspoon vanilla Extract

Bunny decorations

  • 3 small bananas
  • 6 large strawberries stems and greenery removed, halved vertically (top to point)
  • 24 blueberries
  • 6 teaspoons chocolate hazelnut spread Nutella or other brand
  • 1 small plastic bag

Instructions

  • In a large bowl, combine the flour, baking powder, and sugar. Mix well.

  • Mix in the milk, melted butter, egg, and vanilla extract.

  • Heat a large nonstick skillet or griddle over medium heat on the stovetop. Spray a thin layer of nonstick cooking spray.
  • Spoon ¼ cup of batter into the heated pan. When small bubbles appear on the surface of the pancake, flip it over.
    Cook 1 additional minute or until the pancake is golden brown and cooked through. Transfer to a plate.
  • Cut a banana in half in the middle. Peel the banana and cut a ¼-inch thick slice from the flat end of one of the banana halves.

  • Cut the remainder of the banana half in half vertically (these will be the bunny ears).
  • Place one pancake on a dining plate. Place the banana slice on the lower portion of the pancake for a nose. Place the two long banana halves above the pancake for ears.
  • Place the strawberry halves directly beneath the pancake to resemble a bowtie.
    6 large strawberries
  • Place two blueberries for eyes, one for the tip of a nose on the banana slice and one in the middle of the two strawberry halves for the center of the bowtie.

  • Fill a plastic bag with chocolate hazelnut spread and cut a small hole at the tip. Pipe a small mouth onto the banana slice.

  • Repeat for the remaining pancakes and serve warm!

Storing leftovers
Store leftover pancakes (undecorated) in an airtight container or plastic bag in the refrigerator for up to 2-3 days. Reheat in a toaster or toaster oven before decorating and serving.
