Roasted Carnival Squash

Sweet, creamy carnival squash has a nutty, maple syrup like flavor when roasted. The savory seasonings are a delicious complement to the sweetness of this favorite winter squash.

Ingredients

  • 1 carnival squash (1.5 to 2 pounds); halved stem to tip, seeds and membrane removed
  • olive oil spray
  • ½ teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

Oven method

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
  • In a small bowl combine the salt, pepper and Italian seasonings. Mix together.
    ½ teaspoon Italian seasoning, ½ teaspoon kosher salt, ¼ teaspoon freshly ground black pepper
  • Place the squash onto the prepared pan cut side up. Spritz with olive oil spray and sprinkle on the seasoning mixture.
  • Bake in the oven for 40 minutes. The squash should be fork tender (this can vary depending on the size of the squash being cooked). If not allow to cook slightly longer until it is.

Air Fryer method

  • Preheat the air fryer to 370 degrees F. In a small bowl combine the salt, pepper and Italian seasonings. Mix together.
  • Spritz the cut side of the squash with olive oil spray and sprinkle on the seasoning mixture.
  • Place the squash into the air fryer basket skin side down. Cook on 370 degrees for 25 minutes or until the squash flesh is fork tender.

Notes

Cooking time note: overall cooking time noted in recipe for oven baking. Air Fryer cooking is about 25 minutes.
Serving size: generally one squash is split between 2 people. The squash will produce around 1 cup of cooked squash for a medium squash. The nutrition information is based on 2 servings of 1 cup of cooked squash.
How to store
A fresh carnival squash can be stored in a cool, dark location for up to 1 month before cooking. The cooked squash can be stored in an airtight container in the refrigerator for up to 5 days.
