Roast Chicken with Apples

Moist tender boneless chicken breasts cooked in a sweet and savory sauce with fresh apples and onions is a comforting low fat main dish recipe. Homey comfort food with fall flavors.

Ingredients

  • 4 tablespoons unsalted butter melted
  • ¼ cup apple butter
  • 4 8-ounce boneless skinless chicken breasts approximately 2 pounds total
  • 1 large red onion sliced
  • 2 small apples sliced
  • 2 garlic cloves diced or pressed
  • cup white wine
  • Cup low sodium chicken stock or broth
  • ½ cup apple cider
  • ½ teaspoon kosher Salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 2 rosemary sprigs

Instructions

  • Preheat the oven to 400 degrees F.
  • Combine the melted butter and apple butter into a 9-inch by 12-inch baking pan (or similar size roasting pan). Add the chicken breasts, red onion slices, apple slices and crushed garlic.

  • Combine the white wine, chicken stock and apple cider. Pour over the chicken in the pan.

  • Season with salt, black pepper, Italian seasoning and rosemary sprigs. Toss to combine.

  • Place in the preheated oven and bake for 20-25 minutes or until the internal temperature of the chicken reaches 165 degrees.
  • Turn the broiler on in the oven. Broil for 3 minutes watching it closely or until the chicken is golden brown. NOTE: monitor closely to avoid burning.
  • Remove from oven and let rest three minutes for the juices in the chicken to redistribute before cutting and serving.

Notes

Choose chicken breasts similar in size to ensure they cook in the same amount of time.
The recommended portion size for chicken is 4 ounces which we based the servings on. 
Add some spice! To bring some spiciness to the dish sprinkle in some crushed red pepper flakes.
Use shallots. Shallots have a blend of onion and garlic flavor and are not as strong in flavor as onions. You can swap in the same amount instead of the onions.
How to Store
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat before serving.
