Cherry Bellini's

This skinny cherry spin on a classic Bellini cocktails is perfect any time of year. Refreshing in summer, festive for the holiday season and we even have a spooky Halloween option too!

Ingredients

  • 1 ounce maraschino cherry juice
  • 8 ounces extra brut prosecco see notes
  • 2 maraschino cherries for garnish

Instructions

  • Add the maraschino cherry juice (½ ounce per cocktail) to two champagne flutes.
  • Divide the prosecco between the two champagne glasses (4 ounces in each). Garnish with a maraschino cherry on the rim of each glass.
  • Dry Ice Option: Carefully add up to a 1-inch pellet of dry ice to the cocktail – it will begin to bubble and smoke for about 5 minutes.
    When the drink has finished smoking, enjoy. Dry ice will cause the prosecco to bubble quite a bit so do not fill the glass more than ½ way full.

Notes

Prosecco notes:
  • Use extra brut or brut prosecco for fewer calories
  • Chill the prosecco if not making the dry ice version.
  • The prosecco does not need to be chilled for the dry ice version. The dry ice will fully chill the cocktail.
  • The calories in this Bellini will vary based on the type of prosecco used. We based these nutrition facts on Extra Brut Prosecco at 60 calories a glass.
Weight Watchers tracking notes:
As of the publication of this recipe the Weight Watchers app does not track prosecco by type (extra brut, brut, etc) but by brand instead. Most brands listed are higher sugar and higher sugar options. We used a brand in the recipe tracker that most closely matches the sugar level in an extra brut prosecco. You can replace it with the actual prosecco you use.
They also do not include maraschino cherry juice as an option. But due to the low calories, 10 per ounce, we did not try to add a substitute in the tracker.
Dry Ice safety
When dry ice is added to liquid it begins to smoke creating an eerie fog effect. There are some tips to know before using it. Review this Dry Ice Guide before using.
  • It will cause the drink to bubble up so do not fill the glass more than halfway with the cocktail if planning to use dry ice.
  • Dry ice will smoke for about 5 minutes then should be removed before drinking the cocktail (if swallowed it can cause burns)
  • Always use caution when handling dry ice. Never touch dry ice– always use insulated gloves and silicone utensils.
  • Never consume dry ice– wait until all drinks have finished smoking before enjoying.
  • Keep dry ice in a well ventilated container and never leave dry ice where it is accessible to children and/or pets.
