Shaved Brussels Sprout Salad

Crunchy, peppery, sweet and tart flavors make this Shaved Brussels Sprouts Salad exciting and unique! It's a delicious and a beautiful salad perfect for weeknight meals or holiday dinners!

Ingredients

Salad

  • 1 pound Brussels sprouts thinly sliced (see Notes)
  • 1 small red onion diced
  • 1 cup pomegranate Arils
  • cup slivered almonds
  • ¼ cup chopped Italian parsley

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoons white balsamic vinegar
  • 1 ½ teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon honey
  • kosher salt and freshly ground black pepper to taste; after salad is assembled and dressing added

Instructions

  • In a large bowl, add all the ingredients of the salad. Toss to combine.
    1 pound Brussels sprouts, 1 small red onion, 1 cup pomegranate Arils, ⅓ cup slivered almonds, ¼ cup chopped Italian parsley
  • In a small bowl, whisk together the dressing ingredients.
    2 tablespoons olive oil, 1 tablespoons white balsamic vinegar, 1 ½ teaspoons Dijon mustard, ½ teaspoon garlic powder, ½ teaspoon honey
  • Add the dressing to the salad and toss to coat the fresh ingredients. Salt and pepper to taste.
  • Allow salad to sit at room temperature for 15 minutes before serving for the flavors to blend and Brussels sprouts to soften slightly.

Notes

3 ways to shave Brussels sprouts
  • Food processor: use a shredding blade of thin (2mm) slicing blade
  • Mandoline slicer: cut them ⅛-1/4 inch thick. Be sure to use a guard to protect your fingers while slicing
  • Sharp knife: large sharp chef's knife
  • Purchase shaved sprouts: you'll need 7 cups.
How to store
Store leftover salad in an airtight container in the refrigerator for up to 3 days. The salad will continue to soften as it's stored.
