Air Fryer Chicken Fajitas

These easy, fast, delicious Air Fryer Chicken Fajitas are ready in 14 minutes cooking time making them a perfect weeknight healthy meal. We love them on lettuce leaves to keep them slim but they are great on corn tortillas too.

Equipment

Ingredients

  • 1 pound chicken breast (about 2 large chicken breasts) sliced into ½-inch thick strips
  • 1 medium red bell pepper seeds and membrane removed; sliced into ½-inch strips
  • 1 medium green bell pepper seeds and membrane removed; sliced into ½-inch strips
  • 1 medium yellow onion cut into ½-inch slices (slices can be halved)
  • olive oil spray
  • 1 tablespoon chili powder
  • 1 ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground coriander
  • 12 large butter lettuce leaves or soft corn tortillas

Instructions

  • Mix chili powder, cumin, garlic powder, paprika, black pepper and coriander in a small bowl and set aside.
  • Preheat the air fryer to 400°F.
  • Place the chicken strips and vegetable strips in a large mixing bowl and spritz with olive oil spray. Toss the chicken and veggies until well coated.
  • Sprinkle the seasoning mix over the chicken and veggies and toss until seasoning is evenly distributed.
  • Place the chicken and vegetables in the air fryer basket. Cook for 7 minutes.
    Toss the fajita filling by shaking the basket or tossing using tongs. Cook for an additional 7 minutes or until chicken is cooked through.
  • Add salt to taste (if needed). Serve in large butter lettuce leaves with desired toppings.

Notes

1 serving= ½-cup fajita filling + 1 butter lettuce leaf (for nutritional calculations). Actual portions may be larger.
Air Fryer cooking variations
Every brand and size of air fryer cook slightly differently. Monitor the food for doneness and add a few extra minutes if needed if the chicken is not fully cooked. Smaller air fryers may need to cook in two batches.
Topping ideas
  • lime wedges to squeeze some lime juice onto the chicken fajitas
  • Pico de gallo
  • If you like a stronger onion flavor add some diced red onions
  • A dollop of plain non-fat Greek yogurt instead of sour cream
  • Torn fresh cilantro
How to Store
Store in an leftovers airtight container in the refrigerator for up to 4 days. Reheat in the microwave or air fryer before serving.
