Skinny Broccoli Salad

Classic Broccoli Salad with slimmed down ingredients is an irresistible summer salad recipe. Loaded with fresh broccoli, red onion, dried cranberries, sunflower seeds and bacon bits in a light creamy dressing.

Ingredients

For the salad:

  • 6 cups broccoli florets
  • cup dried cranberries
  • cup sunflower seeds
  • cup diced red onions
  • cup bacon bits

For the dressing:

  • ¾ cup light mayonnaise 35 calories per 1 tablespoon mayonnaise
  • 1 ½ tablespoons apple cider vinegar or white wine vinegar
  • 2 teaspoons granulated sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • In a small dish, whisk together the light mayonnaise, vinegar, sugar, salt, and pepper.
  • In a large bowl, combine the broccoli, cranberries, sunflower seeds, onions, and bacon bits. Toss gently.
  • Pour the mayonnaise dressing over the broccoli salad and toss gently until the dressing is fully incorporated. Serve chilled.

Notes

Do not leave this salad or any salads with mayonnaise out at room temperature or in the heat for more than 2 hours.
How to Store
Chill before serving and serve on the same day. It will stay good for 4 days in the refrigerator after that but looks it's best and has the most crunch when served after making.
