Skinny Green Goddess Dressing

This classic salad dressing has tangy flavors of fresh herbs, garlic and onion. This version has been slimmed down in calories and fat while keeping the same traditional flavors. Great as a salad dressing or for dipping vegetables.

Equipment

Ingredients

  • 1 cup non fat plain Greek yogurt Chobani brand recommended
  • 1 medium garlic clove minced
  • 1 tablespoon tarragon vinegar
  • 1 tablespoon lemon juice
  • 1 ½ teaspoons anchovy paste
  • cup Italian parsley stems can be included
  • ¼ cup green onions white and green portions – approximately 2 medium
  • ½ teaspoon kosher salt
  • Grind of black pepper

Instructions

  • Add all the ingredients into a blender jar.
  • Process until the ingredients are smooth and pureed into a dressing.
  • The dressing can be used immediately though though the flavors will intensify and it will thicken slightly if chilled before using.

Notes

Ingredients Notes
If you can't find tarragon vinegar, substitute white wine vinegar and add some fresh tarragon to the blender.
How to Store
Store in an airtight container in the refrigerator for up to one week.
